Sicilian extra virgin olive oil.. cold pressed sicilian treasure !!

The Sicilian extra virgin olive oil, maybe the "Sicilian green gold", as it is called in Italy... and so we really today want to talk about this sicilian treasure.
 It is the land which distinguishes the quality of an olive oil from another, the land more or less salty, near or far to the sea, calcareous or volcanic; however, the land of Sicily, from east to west, from Trapani to Agrigento up to the volcanic Catania with its Mount Etna, producing by centuries, optimal olive trees that our people are expertly transformed into precious juice so fine as good, really called DOP extra virgin olive oil.


  

The olives are harvested between August and September, absolutely by hand or shaking the tree branches to make the olives fall, and year after year, this ritual is as like a celebration for the local people. 
Then the olives so collected, are washed and thrown in a granite millstone like this in the picture down.




The granite stones, crush the olives turning very slowly, so they can produce a more delicate olive paste at a maximum temperature of 16-18 ° C  - the traditional cold pressing - which makes the oil gentle, intense and delicately spiced. 
The olives paste produced by grinding is then processed by special machines called "Gramole" which dissolved molecules of the oil, extracting more juice from pulp as possible. 

By sorting, at this point, the solid part from the liquid part and excluding all water from the oil, we get the extra virgin olive oil cold pressed, namely the "Green Gold of Sicily" 



The Sicilian Exra virgin DOP olive oil has intense and detailed features, for example, deep green color, slightly spicy taste, flavors and scents of fresh olives, fruity taste of almonds and it is the most requested in the world. 

The best way to enjoy an extra virgin olive oil, is to taste it in drops on a small part of homemade bread, as used by the major tasters, or simply enjoy it on tongue, to savoring all its virtues.
